Cajun cooking is not about heat or hot food. Cajun cooking is the marriage of seasoning creating a wonderful flavor. Yes, there are restaurants all across the nation who advertise Cajun cooking or Cajun meals. I know this because I have traveled across this wonderful nation and have sampled a number of these restaurants and many of them would be better served buying premixed ingredients from a Louisiana vendor and following the instructions on the box.

One of the most important ingredients of many of the Cajun dishes, such as gumbos, is a group name the Trinity. Trinity is not meant to be sacrilegious in regards to the Father, Son and Holy Spirit. The Cajun Trinity consists of a mixture of onions, bell peppers and celery.
