Cajun Recipes, there are thousands of Cajun Recipes. Just think
about it, the first Cajuns were relocated to Louisiana over 200 years ago
in the mid 1700s. We could spend days, months and years accumulating all of
the different versions of recipes. So, we decided to provide the some of
the basic recipes along with some very special recipes. Before you get
started, there are some important points you need to understand.

Cajun cooking is not about heat or hot food. Cajun cooking
is the marriage of seasoning creating a wonderful flavor. Yes, there are
restaurants all across the nation who advertise Cajun cooking or Cajun
meals. I know this because I have traveled across this wonderful nation and
have sampled a number of these restaurants and many of them would be better
served buying premixed ingredients from a Louisiana vendor and following
the instructions on the box.

One of the most important ingredients of many of the
Cajun dishes, such as gumbos, is a group name the Trinity. Trinity is not
meant to be sacrilegious in regards to the Father, Son and Holy Spirit. The
Cajun Trinity consists of a mixture of onions, bell peppers and celery.

Cajun cooking is about bringing family and friends
together. Many Cajun dishes take several hours to prepare and cook. While
cooking these dishes, there is usually a gathering of friends and family visiting
and/or playing games. Basically, these people are just have a good time
while making a good meal.
We encourage you
to try the recipes with your friends and family. Finally, remember to thank
God for his blessings and for the opportunity of you being with your
family
